It's that time of year again, when zucchini is in season and everyone is trying to figure out what to do with all of it!

Are you tired of the same old, same old when it comes to zucchini? The good news is it’s actually a very healthy vegetable, and there are plenty of ways to enjoy it without getting sick of it.

Here are just 3 healthy reasons to enjoy zucchini:

  • Low in calories and fat. Zucchini is a great choice for people who are trying to lose weight or eat a healthier diet. It's low in calories and fat, and it's a good source of fiber.
  • High in nutrients. Zucchini is a good source of vitamins A, C, and K. It also contains potassium, magnesium, and folate.
  • Helps with digestion. Summer tempts us toward lots of indulgent picnic & barbecue dishes, which may spell trouble for your tummy. Add a bit of fiber-rich zucchini to keep things moving smoothly.

Which brings us back to our original question - What can I do with all that zucchini? Here’s an option you may not have considered…

Make soup.
